Fresh Peach Pie Recipe
Crust: (mix all ingredients in pie dish)
1 1/2 cups flour
pinch/salt
2 tablespoons granulated sugar
Pour over the above ingredients:
1/2 cup canola oil
2 tablespoons milk
Mix all together in 9" pie plate with fork until totally mixed. Take out 1/2 cup and put in small overproof container. (This will be used to crumble on top of the pie filling.) Pat the remaining mixture with fingers to form the crust. Place the crust and topping in the oven at 375 for 8 - 12 minutes, or until lightly browned. cool.
Pie Filling:
1 cup granulated sugar
2 1/2 tablespoons cornstarch
1 cup water
Mix sugar & cornstarach together, slowly mix in water. Cook in microwave stirring every three minutes until clear.
After cooking add 3 tablespoons peach gelatin. Cool mixture.
Place fresh sliced peaches in baked pie crust. Pour filling over peaches. Crumble baked topping over filling. Chill
