Stephen Childs, Cornell University New York State maple specialist, will conduct the workshop, which will be a blend of classroom instruction and hands-on demonstrations including measuring for invert sugar and making maple candy by hand and with machines. Lunch is provided. The event is limited to a maximum of 20 farms, two participants per farm. Each farm will receive a confections notebook. Please bring one quart of maple syrup to be used in the class.
Registration is required and payment is needed in advance. Cost is $60 per farm with one lunch. Additional lunches may be purchased for $10 per person.
