To enhance the mushroom flavor of this soup, sauté the mushrooms in a small amount of butter before adding to the meat mixture.
- 1 pound beef stew meat cut into 1 inch cubes
- 1 medium onion chopped
- 1 tablespoon vegetable oil
- 6 cups beef broth
- 4 cups mushrooms sliced
- 1/2 cup barley
- Salt and pepper to taste
In a large saucepan brown meat and onions in oil for approximately 10 minutes. Stir in broth, mushrooms and barley. Bring to boil, reduce heat and simmer covered for 1 hour.
