Busy Day Minestrone Soup

Starfire Farms’ Homemade Spaghetti Sauce spices up this winter dish.

Makes 10 servings

Ingredients

  • 32 ounces Starfire Zifer’s Homemade Spaghetti Sauce (or other jarred spaghetti sauce)
  • 4 cups vegetable stock
  • 15 ounces canned diced tomatoes, undrained
  • 2 cans (15 ounces each) kidney beans, drained
  • 1 1/2 cups baby carrots sliced
  • 1 large yellow bell pepper, chopped
  • 15 ounces canned sweet corn, drained
  • 15 ounces canned green beans, drained
  • 1 tablespoon dried Italian seasoning
  • Salt to taste (1-2 teaspoons)
  • 1 cup uncooked penne (or other uncooked pasta)
  • 3 cups fresh spinach leaves
  • Parmesan cheese shavings for garnish

Directions

Stir together all ingredients, except spinach and Parmesan, in large stock pot. Heat over medium-high heat until boiling. Reduce to low, cover and simmer for 15-20 minutes, until pasta is cooked. Stir occasionally.

Remove from heat and stir in spinach leaves. Garnish individual bowls with shaved Parmesan cheese before serving.
