Enjoy a buttery Ritz cracker crust with this pie.
- 1 1/4 cups Ritz cracker crumbs
- 2 tablespoons butter
- 1 1/4 cups milk
- 2 cups fresh raw corn or frozen
- 1/2 teaspoon salt
- 2 tablespoons flour
- 1/2 teaspoon onion salt
- 2 eggs
Preheat oven to 400 degrees. Combine crumbs and 1/2 cup melted butter. Reserve 1/2 cup of mixture for topping. Line 9-inch pie plate with remaining crumbs. In a saucepan, combine 2 tablespoons butter, 1 cup milk, corn and salt. Bring to a boil, reduce heat and cook three minutes. In small bowl, add flour to remaining 1/4 cup of milk; mix until smooth. Add slowly to hot milk-corn mixture; stirring constantly. Cook 2 to 3 minutes or until thick. Cool slightly. Add onion salt. Add eggs slowly; stirring constantly. Pour into pie plate. Sprinkle crumbs on top. Bake for 20 minutes.
