This recipe serves four.
- 4 boneless rib eye steaks
- Olive oil to brush
- Salt and freshly ground black pepper
Preheat the grill to high with the lid down until very hot, about 10 to 15 minutes. Pat the surface of the steaks dry with a paper towel. Brush each side of the steaks lightly with olive oil. Season with salt and pepper. Turn the heat on the grill down to medium. Place the steaks on the grill and grill 7 to 9 minutes on each side for medium rare. Cover loosely with foil; let stand for 15 minutes. Top with a dollop of the herbed shallot butter and serve. Serves four.
