Moncaito Frittata

Makes 6-8 servings


  • 1 tablespoon olive oil
  • 1/2 pound mild sausage
  • 1/2 red bell pepper, chopped
  • 1/2 cup onion, diced
  • 8 eggs
  • 3/4 cup Ruffwing Moncaito cheese
  • 1/2 teaspoon ground mustard
  • A few drops hot sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup spinach, torn up


Preheat oven to 350 degrees. Heat tablespoon of olive oil in a cast iron skillet (ours was a 10-inch) over medium heat. Add sausage. When sausage begins to brown, add onions and red pepper to soften.

Crack eggs into a medium bowl and lightly beat. Add all the ingredients except the spinach. When the peppers and onions are softened, drain any excess grease. Add spinach to pan and cook until just wilted. Pour egg mixture over sausage mixture and cook until sides just start to firm up. Place skillet into oven.
Bake for 15-20 minutes until eggs are firm and browning on top.
