- 2 tablespoons olive oil
- 3 tablespoons garlic, minced
- 1/4 cup shallots, minced
- 2 cups chopped piquillo peppers
- 2 cups pomodorino tomato sauce
- kosher salt
- black pepper fine ground
Saute shallots and garlic together in olive oil until tender, add piquillo peppers and pomodorino sauce and bring to a simmer. Season with salt and pepper to taste and puree.
