Piquillo Pepper Sauce


  • 2 tablespoons olive oil
  • 3 tablespoons garlic, minced
  • 1/4 cup shallots, minced
  • 2 cups chopped piquillo peppers
  • 2 cups pomodorino tomato sauce
  • kosher salt
  • black pepper fine ground


Saute shallots and garlic together in olive oil until tender, add piquillo peppers and pomodorino sauce and bring to a simmer.  Season with salt and pepper to taste and puree.
