Slow Cooker Whole Chicken

This recipe produces a delicious, juicy chicken that makes a great meal served with potatoes and another vegetable. It usually results in enough leftover meat to make a chicken pot pie or white chili for another night.

Makes 6 servings

  • 4 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon ground thyme
  • 1.5 teaspoons ground pepper
  • 1/2 teaspoon garlic powder
  • 1 cup chopped onion
  • 4-6 pounds whole fresh chicken, cleaned

Combine all of the spices in a small bowl. Place the onion on the bottom of a slow cooker. Discard the neck and giblets from the cavity of the chicken and rinse the chicken well, removing any excess fat from the interior cavity. Pat dry with a towel. Rub the spice mixture all over the chicken, including between the skin and the breast meat. Place in slow cooker on top of onions. Cook on high for four hours or low for six to eight hours.
