Watermelon Mint and Feta Salad

Watermelon, Feta and Fresh Mint Salad

Feta cheese adds a salty component to this fresh melon salad.


  • 4 cups diced seedless watermelon red or yellow fleshed, chilled
  • 1 cup diced feta cheese
  • 1/2 cup fresh mint leaves cut into thin strips
  • 2 tablespoons extra virgin olive oil
  • Freshly ground black pepper


Combine all of the ingredients. Chill to blend flavors. Taste and add salt if desired, but feta cheese serves as the salty component.

Makes 4 servings.
