Rhubarb Upside Down Cake

 

Have a quality boxed cake mix on hand during rhubarb season and this classic cake recipe (with a tart twist) can be ready in no time for dessert or a potluck dish.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup dark brown sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 2 cups diced rhubarb
  • 1 box yellow cake mix

Directions

Preheat the oven to 350 degrees. Warm a 10-inch cast iron skillet over medium low heat. Add the butter. When it has melted, stir in the brown sugar, cinnamon and ginger. Distribute the mixture evenly in the skillet then top with the diced rhubarb.

Prepare the boxed cake mix according to directions. Spread over the rhubarb. Bake for 35 to 45 minutes or until browned on top and the edges pull away from the side of the skillet. Let cool for 15 minutes then invert the cake onto a serving plate. Serve slightly warm, or cool completely before slicing and serving.
