Ingredients
- 1 clove garlic, minced
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 cup fresh blueberries
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon dried thyme
- 1 teaspoon ground ginger
- 2 tablespoons water
Directions
Preheat oven to 375 degrees. Lightly spray a 9 by 13-inch baking dish. Combine the rub ingredients and rub onto 2 pounds of pork. Place pork in dish. Set aside.
Combine the glaze ingredients in saucepan. Cook over medium heat for 5 minutes. Pour the blueberry sauce over the meat.*
Bake uncovered in the oven for 25 to 30 minutes – until the internal temperature reaches 145 degrees. Let the pork rest 3-5 minutes before serving.
*Cooking the meat in the blueberry sauce will give it a purple stain when it’s removed from the oven.
