Starfire Farms’ Homemade Spaghetti Sauce spices up this winter dish.
Makes 10 servingsIngredients
- 32 ounces Starfire Zifer’s Homemade Spaghetti Sauce (or other jarred spaghetti sauce)
- 4 cups vegetable stock
- 15 ounces canned diced tomatoes, undrained
- 2 cans (15 ounces each) kidney beans, drained
- 1 1/2 cups baby carrots sliced
- 1 large yellow bell pepper, chopped
- 15 ounces canned sweet corn, drained
- 15 ounces canned green beans, drained
- 1 tablespoon dried Italian seasoning
- Salt to taste (1-2 teaspoons)
- 1 cup uncooked penne (or other uncooked pasta)
- 3 cups fresh spinach leaves
- Parmesan cheese shavings for garnish
Directions
Stir together Starfire Farms Zifer’s Homemade Spaghetti Sauce and all other ingredients, except spinach and Parmesan, in large stock pot. Heat over medium-high heat until boiling. Reduce to low, cover and simmer for 15-20 minutes, until pasta is cooked. Stir occasionally.
Remove from heat and stir in spinach leaves. Garnish individual bowls with shaved Parmesan cheese before serving.
