Chipotle Salsa Steak

Ingredients

  • 1 flank steak about 1 1/2 pounds
  • 1/3 cup fresh lime juice
  • 1/3 cup Starfire Farm's spicy homestyle salsa
  • 1/4 fresh cilantro chopped
  • 2 tablespoons brown sugar
  • 7 ounces chipotle peppers in adobo sauce (1 can)
  • 1 garlic clove minced
  • 1 teaspoon salt
  • Additional salsa for garnish

Directions

Remove chipotle peppers from can (keeping sauce), discard as many seeds as possible, and chop peppers.

In medium bowl combine all ingredients, including chopped peppers and adobo sauce. Place flank steak in zipclose bag and pour marinade over steak. Close bag securely, place in a clean bowl and allow to marinate in the refrigerator for 6 hours or overnight.

Remove steak from marinade; discard marinade. Place steak on medium-high grill for about 15 minutes, turning one or two times. Test with a meat thermometer, in the thickest part of the steak – 145 degrees for medium rare or 160 degrees for medium. To broil, place steak on a rack in a broiler pan and position 2-3 inches from broiler. Broil for 13-18 minutes, depending on desired doneness, turning one or two times. Allow steak to rest covered loosely with foil at least 5-7 minutes. Slice steak across the grain into thin slices. Serve with additional Starfire Farms salsa.
