Tzatziki is a classic Greek cucumber sauce that can be used as a dip with fresh vegetables and toasted pita slices but its cool, refreshing taste is best when used to top grilled and roasted meats like lamb burgers and gyros.

Ingredients

  • 1 small seedless cucumber
  • 1 tablespoon coarse salt
  • 2 cups plain yogurt
  • 1/2 cup sour cream
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons minced fresh dill
  • 1 clove garlic
  • Freshly ground black pepper

Directions

Mix the grated cucumber with salt in a small bowl. Refrigerate for three hours.

Place the drained yogurt in a medium bowl. Stir in the sour cream, lemon juice, dill and garlic. Squeeze as much liquid from the cucumbers as possible. Stir the cucumber into the yogurt mixture. Season with pepper. Refrigerate for at least two hours before serving.

Makes approx 2½ cups

Note: Draining yogurt leaves it with a thicker, firmer consistency. Line a sieve with cheesecloth and place over a bowl. Place the yogurt in the sieve, cover with plastic wrap and allow to drain in the refrigerator overnight.
