The is traditional chilled soup, with plenty of vegetables.
Ingredients
- 1 46 ounce can tomato juice
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 1 clove garlic crushed
- 3 tablespoons lemon juice
- 1/4 cup olive oil
- 1 teaspoon Worcestershire sauce
- 3/4 cup cucumber pared, seeded and chopped
- 3/4 cup green pepper seeded, chopped
- 1 cup carrots chopped
- 1 cup celery chopped
- 1/4 cup green onion chopped
- 2 large tomatoes chopped
Directions
Combine tomato juice, sugar, salt, garlic, lemon juice, oil and Worcestershire sauce in a large bowl. Beat with rotary mixer to blend. Stir in the six chopped vegetables. Cover bowl and refrigerate overnight. Serve chilled with garlic croutons.
