Ingredients
- 4 cups tomatoes, cut up (either canned or fresh with skins removed)
- 2 1/2 cups herb stuffing mix
- 1 small onion, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon oregano
- pepper to taste
- 1/4 cup butter
- 2 teaspoons sugar
Directions
In buttered 2-quart casserole dish, mix together tomatoes and two cups stuffing mix. Stir in rest of ingredients, reserving the remaining 1/2 cup of stuffing mix. Sprinkle reserved mix over top of tomato mixture. Bake at 375 degrees uncovered for 45 minutes.
