Pink Lozenges Cake

 

This pretty cake is a family favorite passed down from one generation to another.

Ingredients

  • 40 pink lozenges candies
  • 1 cup milk
  • 1/2 cup butter
  • 1 cup sugar
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 egg whites
  • 3 tablespoons cold water

Directions

Place lozenges in bowl with milk. Cover and refrigerate overnight. Makes 1¼ cups liquid.

Next day, preheat oven to 350 degrees. Grease and flour two round cake pans. Cream together butter and sugar; set aside. Sift together flour, baking powder and salt; set aside. In large bowl, beat egg whites and water until stiff. Add butter and sugar mixture to egg whites. Add 1 cup milk and lozenges liquid, reserving 1/4 cup liquid for icing. Gradually add flour mixture. Pour mixture into cake pans. Bake 45 minutes or until toothpick inserted in middle of cake comes out clean.

Icing: Add remaining 1/4 cup milk and lozenges liquid to your favorite white icing.
