Group Membership Spotlight: 2 NONNI

The Northeast Counties Farm Bureau serving Ashtabula, Geauga, Lake, and Trumbull counties is excited to highlight one of our valued business members who plays an important role in supporting local agriculture and strengthening our rural communities. These spotlights are our way of recognizing the businesses that invest in Farm Bureau through Group Member sponsorships and help make a positive impact for agriculture across our communities.

This week’s Business Member Spotlight is…….

Located in Geauga County, Michael and Carla Albino’s family owned and operated an Italian family restaurant, pizzeria, and party center named Guido’s beginning in 1958 in Euclid before opening another in Chesterland in 1962. Cooking for not only customers but family and friends has always been their passion. Michael and Carla then decided to start 2 NONNI in honor of both of Michael’s grandfathers, who taught them the traditional values and techniques for preparing cured meats. 

Michael and Carla Albino have a passion for cooking and for serving their customers, continuing to work as full-time part owners and managers of the restaurant while developing relationships with local and regional meat packers, food product suppliers, and distributors. This allows them to take the brand from their minds and hands to be available for the public. 

They offer three hot and three mild sausage recipes, each one curated by taste testing, combining their favorite ingredients and flavors. The meats are made by mixing 85% lean pork shoulder, natural ingredients, red wine, no preservatives, and finished with a fine grind for a nice smooth bite. The seasoning used as the base line for the Original Hot Sausage is a blend of natural herbs and spices, no salt or sugar, making it an amazing addition to any meal.

The Albins are currently working on refining recipes and techniques of making dried sausage to be sold to the public, but they have Zesty Italian Seasoning and Dry Rub as well as two sausage recipes available for fresh or frozen retail at Heinen’s grocery store locations and some local markets. They also are curating salad dressings and pasta sauce.
