In an effort to simplify their lives and improve the quality of living, Clermont County Board Trustee, Cindy Cassell and her husband, David Uible, purchased an old dairy farm on 171 acres in New Richmond, Ohio in 1994. Renee Koerner and her family own and operate Big Fish Farms. At Big Fish Farms they are dedicated to sustainably rearing and ranching the amazing American Paddlefish. Every part of the process, from spawning fry to making caviar, is under their supervision. Almost all “farmed” caviars are made from fish raised in tanks, eating a prepared pelleted diet, but they “ranch” their fish which gives them plenty of room to swim freely with only 10 to 20 fish per water acre.
