Herbed Scalloped Tomatoes

 

Ingredients

  • 4 cups tomatoes, cut up (either canned or fresh with skins removed)
  • 2 1/2 cups herb stuffing mix
  • 1 small onion, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano
  • pepper to taste
  • 1/4 cup butter
  • 2 teaspoons sugar

Directions

In buttered 2-quart casserole dish, mix together tomatoes and two cups stuffing mix. Stir in rest of ingredients, reserving the remaining 1/2 cup of stuffing mix. Sprinkle reserved mix over top of tomato mixture. Bake at 375 degrees uncovered for 45 minutes.
