This simple rhubarb recipe is great served warm and topped with whipped cream or ice cream.
Ingredients

- 1 cup sifted flour
- 1/2 cup softened butter
- 5 tablespoons powdered sugar
- ~~ Topping ~~
- 2 eggs
- 1/4 cup flour
- 1 cup sugar
- 3 cups rhubarb
Directions
Preheat oven to 350 degrees. Sift together flour and powdered sugar, blend together with butter. Press mixture into 8 x 10-inch pan. Bake 10 to 15 minutes until lightly browned. Combine all topping ingredients and spoon onto baked crust. Bake 30 minutes until browned and set.
