If you are using pre-cooked shrimp, they may be added at the end.
Ingredients
- 1/2 pound uncooked shrimp, peeled
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 sweet pepper, chopped
- 2 tablespoons butter
- 2 tablespoons parsley, chopped
- 1 1/2 cups tomatoes, crushed
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- 1 bay leaf
- 2 tablespoons lemon juice
- Salt and pepper, to taste
- Hot sauce, to taste
- Rice, 4 servings
Directions
Sauté the onions, garlic, celery and sweet pepper in butter; season to taste with salt and pepper. Cook 2 to 4 minutes; add the tomatoes, thyme, basil, bay leaf, lemon juice and hot sauce. Simmer 10 to 15 minutes. Add shrimp and parsley, cook 5 to 7 minutes until the shrimp is done. Serve over rice.
