This recipe uses the zippered plastic bag method to mix the breading and coat the catfish.

Ingredients

  • 4 medium-size farm-raised catfish fillets
  • 1 cup flour
  • 1/4 cup yellow cornmeal
  • 1/2 to 1 teaspoon garlic powder
  • 1/4 - 1/2 cup vegetable oil
  • Salt to taste

Directions

In a large zippered plastic bag, mix flour, cornmeal, garlic powder and salt. Place one fillet in bag at a time; shake to coat well. Heat oil in a large skillet. Place fillet in hot oil and fry until done, 3 to 4 minutes per side or until fish flakes easily.
