Spelt Pancakes with Cider Syrup

 

A stack of fluffy spelt pancakes with warm pure Ohio maple syrup? Spectacular! With homemade cider syrup? Priceless!

Ingredients

  • 2 cups spelt flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/2 cup vegetable or canola oil
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla

Directions

In a large bowl, whisk together the spelt flour, sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs, oil, milk and vanilla together. Add the liquid to the dry ingredients stirring gently until the ingredients are blended. (It’s best to do this by hand and not over mix.)

Pour ¼ cup of batter onto a lightly greased, hot griddle. When bubbles form on the top of the pancakes, about one minute, turn and cook for an additional minute until golden brown. Transfer to a baking tray and keep warm in a low oven. Repeat with the remaining batter, lightly greasing the griddle in between batches. Serve the pancakes with butter and maple syrup or apple cider syrup.

Makes approximately 16 pancakes.
