Ingredients
- 1 package rice noodles
- 2 tablespoons olive oil
- 1 pound peeled, deveined cooked shrimp
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 cup mushrooms sliced
- 1/2 cup water chestnuts sliced
- 1 cup tamari
Directions
Bring three quarts of water to a rolling boil, add rice noodles and boil in an uncovered pot until noodles are cooked. Remove from heat.
In a medium skillet, heat olive oil for about 1 minute over medium-high heat. Add peppers, mushrooms and water chestnuts and stir fry for 3-5 minutes. Add shrimp and stir fry an additional 3-5 minutes. Drain noodles and add noodles and tamari to skillet. Stir fry an additional minute or two to combine flavors. Serve immediately.
Note: Tamari is a great substitute for soy sauce. Many soy sauces contain gluten products.
